本标准规定了用荧光法和2,4-二硝基苯肼比色法测定食品中的抗坏血酸。本标准适用于蔬菜、水果及其制品中总抗坏血酸的测定。


1 Scope

This standard specifies determination of total ascorbic acid in the food in fluorometric method and colorimetric method.
This standard is applicable to determination of total ascorbic acid in fruits, vegetables and derived products
Detection limit of this method: 0.022μg/mL for fluorometric method and 0.1μg/mL for colorimetric method. Linear range: 5~20μg/mL for fluorometric method and 1~12μg/mL for colorimetric method.
