SN/T 0786-2016, as a replacement version of SN/T 0786-1999, reflects the development and evolution of agar testing technology over the past 15 years. This revision focuses on strengthening food safety risk control, deleting the outdated water absorption index, and adding clear requirements for new microbial testing items, reflecting the shift from simple quality inspection to comprehensive safety and sanitation management and control.

5.5.3 Physical and chemical indicators

The new version of the standard raises the threshold of gel strength from no clear regulation to ≥150g/cm² (1.5% solution), and adopts the GB 1975-2010 Appendix method to ensure the functional quality of agar as a food additive. The heavy metal limit requirements are aligned with the standards of the Codex Alimentarius Commission (CAC).

5.5.4 Microbial control

Establish a four-level microbial safety barrier:

  • Total colony count ≤5000CFU/g
  • Mold and yeast ≤500CFU/g
  • Escherichia coli and Salmonella shall not be detected
The detection method strictly corresponds to the GB 4789 series standards.

1. Packaging labeling: The words "food additives" and complete information in accordance with Announcement No. 52 of the General Administration must be marked at the same time
2. Sample management: The delivery of microbial samples must be controlled within 24 hours, and the storage environment must meet the requirements of moisture-proof and light-proof
3. Inspection time limit: Pay attention to the 2-month validity period limit. It is recommended to start the inspection process 60 days before export

Common unqualified disposal

Case: A batch of agar was judged to be unqualified due to the gel strength test value of 140g/cm². The company completed the rectification through the following steps:

  1. Re-screening of raw materials (selecting high-quality seaweed of the genus Gracilaria)
  2. Optimization of dehydration and drying process parameters
  3. Release after re-sampling and testing under CIQ supervision
