This standard establishes for the first time a quantitative indicator for time to pass the maximum ice crystal formation zone, requiring that the retention time of meat in the (-1~-5)℃ temperature zone does not exceed 30 minutes, which is more than 60% shorter than traditional freezing technology. By controlling the growth rate of ice crystals, mechanical damage to cells can be reduced, and the juice loss rate after 90 days of storage can be controlled to ≤10.5%.

Meat pretreatment specifications

The test requires the use of an electronic balance to accurately weigh 400g±50g samples. Pork/beef must maintain a standard thickness of 4cm±1cm. Poultry must be processed within 2 hours after being killed alive. The thermocouple insertion position should be located at the geometric center point to ensure the accuracy of temperature measurement.

Juice loss rate test
