本标准规定了植物油脂加热试验的术语和定义、原理、仪器和用具、样品制备、操作步骤和结果表示。
本标准适用于植物油脂。本标准代替GB/T 5531-1985 《植物油脂检验　加热试验》。
本标准与GB/T 5531-1985 相比的主要变化如下：
―――增加了用罗维朋比色计对油脂样品在加热前后颜色的测定。

1 Scope

This standard specifies the term and definition, principle, instruments, sample preparation, operation procedure and result expression of heating test of vegetable fats and oils.
This standard is applicable to vegetable fats and oils.
