《GB/T 18108-2008鲜海水鱼》由TC156（全国水产标准化技术委员会）归口，主管部门为农业农村部。
本标准代替ＧＢ／Ｔ１８１０８―２０００《鲜海水鱼》。本标准规定了鲜海水鱼的技术要求、试验方法、检验规则以及标签、包装、运输和贮存。
本标准适用于捕获后未经加工处理的鲜海水鱼、冰鲜海水鱼和仅去内脏而未作其他处理的鲜海水鱼。本标准与ＧＢ／Ｔ１８１０８―２０００相比主要变化如下：
―――对“感官要求”的叙述进行了补充完善；
―――将“蒸煮试验”纳入“感官要求”中；
―――挥发性盐基氮指标删除了对板鳃鱼类的规定；
―――增加了甲基汞、铅、镉、多氯联苯、土霉素、磺胺类（总量）、氟甲砜霉素的限量指标；
―――删除了汞、六六六、滴滴涕的限量指标。

Scope

This standard specifies the technical requirements, test methods, inspection rules, labeling, packaging, transportation and storage of fresh sea fish. This standard applies to fresh seawater fish that have not been processed after harvesting, chilled seawater fish, and fresh seawater fish that have only been viscerated but not otherwise processed.
