《GB/T 19694-2008地理标志产品 平遥牛肉》由TC554（全国知识管理标准化技术委员会）归口，TC554SC1（全国知识管理标准化技术委员会地理标志分会）执行，主管部门为国家知识产权局。
本标准根据《地理标志产品保护规定》与ＧＢ／Ｔ１７９２４《地理标志产品标准通用要求》制定。 本标准代替ＧＢ１９６９４―２００５《原产地域产品　平遥牛肉》。本标准规定了平遥牛肉的术语和定义、地理标志产品保护范围、要求、试验方法、检验规则及标志、标签、包装、运输和贮存。本标准适用于国家质量监督检验检疫行政主管部门根据《地理标志产品保护规定》批准保护的平遥牛肉。 本标准与ＧＢ１９６９４―２００５相比主要变化如下：
―――将标准属性由强制性改为推荐性；
―――根据国家质量监督检验检疫总局颁布的《地理标志产品保护规定》，修改了标准中英文名称，将标准中有关“原产地域”的表述修改为“地理标志”；
―――增加了平遥牛肉产品按口味分类的内容；
―――增加了对平遥牛肉质量等级的划分；
―――修改了理化指标，依据ＧＢ１３１００《肉类罐头卫生标准》修改了高温灭菌制品中重金属指标；依据ＧＢ２７２６《熟肉制品卫生标准》增加了非高温灭菌熟肉制品的重金属指标；
―――细化了微生物指标；
―――增加了非高温灭菌制品的运输要求。

Scope

This standard specifies the terms and definitions of Pingyao beef, the scope of protection of geographical indication products, requirements, test methods, inspection rules and labels, signs, packaging, transportation, and storage. This standard is applicable to Pingyao beef approved for protection by the national quality supervision, inspection and quarantine administrative department in accordance with the "Regulations on the Protection of Geographical Indication Products".
