Introduction
Standard Framework and Technological Evolution
This standard establishes the full-chain technical specifications for packaged eggs for the first time, integrating the test methods of the original NY/T 1758-2009 "Fresh Egg Grade Specifications", and adding:

Core quality grading requirements
Special eggs must meet the following requirements at the same time:
- Appearance indicators: eggshell without defects, unclean surface ≤4mm²
- Content indicators: Haugh unit>72, egg white clearly layered
- Proportion requirements: AA grade special eggs ≥90% (first grade eggs ≤10%)
Application case: A farm must ensure the following requirements when applying for AA grade:
1) The average Haugh unit of 30 eggs sampled daily shall be ≥75
2) Among the 84 appearance samples sampled in each batch, ≤14 eggs shall be of grade one
Innovative detection method
The porcelain plate crushing method is used to achieve three simultaneous tests:
- Protein status: the grade is determined by the separation degree of concentrated/dilute protein
- German embryonic disc development: unfertilized eggs must have no vascular network formation
- Foreign matter detection: the diameter of blood spots/meat spots must be <2mm

Note during supervision and inspection: If the storage period exceeds 7 days, the protein height does not need to be tested, but the breakage rate must be ≤1% (AA grade)
