Introduction
Interpretation of the core value of the standard
As my country's first national standard for geographical indication products for Pu'er coffee, GB/T 45690-2025 has established a full-chain quality control system from "field to cupping". The standard highlights three major innovations:
| Dimensions | Traditional standards | Features of this standard |
|---|---|---|
| Sensory evaluation | Simple grading | Establish a four-level evaluation system (special/high-quality/conventional/non-grade) |
| Processing technology | Single treatment method | Standardize three types of process parameters: wet/dry/honey treatment |
| Defect control | Total amount limit | Distinguish between serious defects and general defects dual indicators |
Analysis of key technical requirements
1. Origin environment control
The standard strictly limits the planting area to gentle slopes above 800m above sea level, and requires a specific loam type with a soil pH of 5.5-6.5. Appendix A clearly defines 86 towns in 10 counties (districts) in Pu'er as legal production areas.
2. Innovation in cultivation management
- Shade system: It is mandatory to build a composite ecosystem of economic tree species such as coffee, macadamia, camphor, etc.
- Precision fertilization: Differentiated nitrogen, phosphorus and potassium ratios are implemented according to the growth cycle (2-3 times/year for young trees, ≥3 times/year for trees in production)
- Disease control: It is recommended to use plant-based pesticides such as neem for green control
Quality evaluation system
Sensory analysis laboratory configuration
Establish a professional laboratory in accordance with the requirements of GB/T 13868. The core equipment includes:
| Functional area | Essential equipment | Precision requirements |
|---|---|---|
| Sample preparation area | Baking equipment, colorimeter | Baking color value control ±5 |
| Inspection area | Tasting bowl, brewing kettle | Water temperature control ±1℃ |
Defect classification management
The standard innovatively divides defects into two categories:
- Serious defects (black beans/moldy beans, etc.): zero tolerance for premium products
- General defects (worm-eaten beans/broken grains, etc.): ≤4% (premium) is allowed
Implementation suggestions
Enterprise application solutions
- Establish a origin traceability system to record planting coordinates, altitude and other geographic information
- Configure rapid testing equipment (moisture meter/colorimeter, etc.)
- Carry out sensory evaluator training and master ISO 6668 sampling specifications
Regulatory focus
Suggested focus:
- Pectin retention rate of honey processing technology (80-100% for black honey/50-80% for red honey)
- Verification of flavor characteristics after baking (special grade must have obvious floral and fruity aroma)
- Compliance of use of geographical indication special mark on packaging label
