《GB/T 14613-2008粮油检验 全麦粉发酵时间试验（Pelshenke试验）》由TC270（全国粮油标准化技术委员会）归口，TC270SC1（全国粮油标准化技术委员会原粮及制品分会）执行，主管部门为国家粮食和物资储备局。
本标准是对ＧＢ／Ｔ１４６１３―１９９３《全麦粉发酵时间试验》的修订。本标准自实施之日起，代替ＧＢ／Ｔ１４６１３―１９９３《全麦粉发酵时间试验》。本标准规定了全麦粉发酵时间试验（Ｐｅｌｓｈｅｎｋｅ试验）的原理、仪器和设备、试剂、样品制备、测定步骤和结果表示。本标准适用于各种小麦全麦粉发酵时间试验（Ｐｅｌｓｈｅｎｋｅ试验）。本标准与ＧＢ／Ｔ１４６１３―１９９３的主要差异如下：
―――将标准名称改为《粮油检验　全麦粉发酵时间试验（Ｐｅｌｓｈｅｎｋｅ试验）》；
―――增加了规范性引用文件；
―――将使用天平的“感量０．１ｇ”改为“感量０．０１ｇ”。

Scope

This standard specifies the principle, instruments and equipment, reagents, sample preparation, measurement procedures and result presentation of whole wheat flour fermentation time test (Pelshenke test). This standard applies to the fermentation time test (Pelshenke test) of various wheat whole wheat flour.
