《GB/T 17239-2008鲜、冻兔肉》由326（农业农村部）归口，主管部门为农业农村部。
本标准规定了鲜、冻兔肉相关的术语和定义、技术要求、检验方法、检验规则和标签、标志、包装、贮存的要求。本标准适用于健康活兔经屠宰、加工的鲜兔肉或冻兔肉。本标准是对ＧＢ／Ｔ１７２３９―１９９８《鲜、冻兔肉》的修订，与ＧＢ／Ｔ１７２３９―１９９８相比，主要变化如下：
―――不再规定产品分类和规格；
―――增加了产品术语和定义；
―――对某些技术要求做了调整，增加了理化指标、微生物指标及净含量的规定；
―――对冷却要求做了调整，要求冷却后的肉的中心温度达到７ ℃以下；
―――增加了分割技术要求；
―――对冻结要求做了调整，应在库温低于－２８ ℃ 的条件下，要求在４８ｈ 内兔肉中心温度降至－１８ ℃以下；
―――对检验规则做了调整；
―――对判定规则做了调整；
―――对标志、包装、贮存、运输做了调整。

Scope

This standard specifies the terms and definitions, technical requirements, inspection methods, inspection rules and requirements for labeling, marking, packaging and storage of fresh and frozen rabbit meat. This standard is applicable to the slaughtered and processed fresh or frozen rabbit meat of healthy live rabbits.
