《GB/T 21924-2008谷朊粉》由TC270（全国粮油标准化技术委员会）归口，TC270SC1（全国粮油标准化技术委员会原粮及制品分会）执行，主管部门为国家粮食和物资储备局。
本标准规定了谷朊粉的有关术语和定义、质量要求、检验方法、检验规则、判定规则、标签标识以及对包装、储存和运输的要求。本标准适用于采用各种工艺从小麦中提取的商品谷朊粉。 本标准的部分指标参照了国际食品法典委员会的标准《小麦蛋白产品（包括小麦面筋）》（Ｃｏｄｅｘ Ｓｔａｎ１６３-１９８７，Ｒｅｖ．１-２００１）制定。

1 Scope

This standard specifies relevant terms and definitions, quality requirements, inspection methods, inspection rules, judgment rules, label identification, packaging, storage and transportation requirements of wheat gluten.
This standard is applicable to wheat gluten products extracted from wheat through various technologies.
