《GB/T 12293-1990水果、蔬菜制品可滴定酸度的测定》由TC64（全国食品工业标准化技术委员会）归口，主管部门为国家标准化管理委员会。
本标准规定了果蔬制品可滴定酸度的两种测定方法，即电位滴定法和指示剂滴定法。本标准适用于测定果蔬制品及新鲜果蔬的可滴定酸度。电位滴定法为仲裁法。指示剂滴定法为常规法。指示剂滴定法不适用于浸出液颜色较深的试样。

Scope

This standard specifies two methods for determining the titratable acidity of fruit and vegetable products, namely potentiometric titration and indicator titration. This standard is applicable to the determination of titratable acidity of fruit and vegetable products and fresh fruits and vegetables. Potentiometric titration is an arbitration method. Indicator titration is a routine method. Indicator titration is not suitable for samples with darker leaching solution.
