《GB/T 23490-2009食品水分活度的测定》由TC64（全国食品工业标准化技术委员会）归口，主管部门为国家标准化管理委员会。
本标准规定了康卫氏皿扩散法和水分活度仪扩散法测定食品中的水分活度。
本标准适用于预包装谷物制品类、肉制品类、水产制品类、蜂产品类、薯类制品类、水果制品类、蔬菜制品类、乳粉、固体饮料的食品水分活度的测定。
本标准不适用于冷冻和含挥发性成分的食品。

Scope

This standard specifies the water activity in foodstuffs measured by the Kangwei dish diffusion method and the water activity meter diffusion method. This standard is applicable to the determination of water activity of prepackaged cereal products, meat products, aquatic products, bee products, potato products, fruit products, vegetable products, milk powder and solid beverages. This standard does not apply to foods with frozen and volatile ingredients. The range of the water activity of the food in this standard is 0.00-0.98 for the Conveyer dish diffusion method; 0.60-0.90 for the water activity meter diffusion method.
