Introduction
Interpretation of Technical Specifications for the Circulation of Fresh Edible Fungi
1. Background and Significance of Standard Formulation
With the rapid development of my country's edible fungi industry, the demand for standardization of circulation links is becoming increasingly urgent. The GB/T 45197-2025 standard aims to ensure the quality and safety of fresh edible fungi, improve circulation efficiency, and promote industrial upgrading.
2. Scope of application of the standard
- Cultivated edible fungi: shiitake mushrooms, oyster mushrooms, and Agaricus bisporus
- Wild edible fungi: boletus, matsutake, Chinese truffles/Indian truffles
- The entire circulation process from harvesting to recall
| Links | Specific requirements | Importance analysis |
|---|---|---|
| Harvesting | Shiitake moisture content ≤90%, Oyster mushroom, Agaricus bisporus moisture content ≤92% | Ensure the moisture content of fresh products is moderate and extend the shelf life |
| Trimming and grading | Divided into first, second and third grades, in accordance with GB/T38581 and other standards | Uniform quality standards for easy circulation and sales |
| Precooling | Precool to 0°C~4°C in time according to different temperature conditions | Reduce the risk of fresh products rotting and maintain freshness |
3. Implementation suggestions and typical cases
For example, in the precooling process, cold air precooling or vacuum precooling is used, and timely processing is carried out according to the temperature conditions at the time of harvest. If precooling is not possible immediately, cooling measures such as cold water and ice bags can be used first.
4. Analysis of Technological Evolution
Edible fungus circulation technology has gradually developed from the traditional experience model to the direction of standardization and intelligence. The application of cold chain technology and the Internet of Things has significantly improved circulation efficiency and product quality.
