《GB/T 5009.26-2003食品中N-亚硝胺类的测定》由361(国家卫生健康委员会)归口,主管部门为国家卫生健康委员会。
本标准规定了用气相色谱-热能分析仪(GO-TEA)测定啤酒中挥发性N-亚硝胺的测定方法。本标准适用于啤酒中N-亚硝基二甲胺含量的测定。仪器的最低检出量为0.1ng,在试样取样量为50g,浓缩体积为0.5mL,进样体积为10μL时,本方法的最低检出浓度为0.1μg/kg;在取样量为20g,浓缩体积为1.0mL,进样体积为5μL时,本方法的最低检出浓度为1.0μg/kg。


Introduction

Technical analysis of standard methods

Gas chromatography-thermal energy analyzer (GC-TEA) and Gas chromatography-mass spectrometer (GC-MS) are the core equipment of this standard. The detection objects include four compounds such as N-nitrosodimethylamine (NDMA) and N-nitrosodiethylamine (NDEA), and the minimum detection concentration can reach 0.1μg/kg.

Key operation precautions

The 2023 version of the standard mainly modifies the scope of application of pretreatment methods and the requirements for result expression, adds food detection matrix, and expands the detection range by 200%. By introducing a C18 solid phase extraction column to optimize the purification steps, the recovery rate was increased by %pillar-box


Actual application case

A brewery found that the NDMA content curve of conventional samples fluctuated abnormally. By optimizing the amount of sodium hydroxide added during extraction (adjusted to 2 mol/L in the experiment), the false negative problem was successfully solved, and the recovery rate was verified to be increased from 65% to 92%.
