本标准规定了用气相色谱-热能分析仪(GO-TEA)测定啤酒中挥发性N-亚硝胺的测定方法。本标准适用于啤酒中N-亚硝基二甲胺含量的测定。仪器的最低检出量为0.1ng,在试样取样量为50g,浓缩体积为0.5mL,进样体积为10μL时,本方法的最低检出浓度为0.1μg/kg;在取样量为20g,浓缩体积为1.0mL,进样体积为5μL时,本方法的最低检出浓度为1.0μg/kg。
Introduction
Technical analysis of standard methods
Gas chromatography-thermal energy analyzer (GC-TEA) and Gas chromatography-mass spectrometer (GC-MS) are the core equipment of this standard. The detection objects include four compounds such as N-nitrosodimethylamine (NDMA) and N-nitrosodiethylamine (NDEA), and the minimum detection concentration can reach 0.1μg/kg.

A brewery found that the NDMA content curve of conventional samples fluctuated abnormally. By optimizing the amount of sodium hydroxide added during extraction (adjusted to 2 mol/L in the experiment), the false negative problem was successfully solved, and the recovery rate was verified to be increased from 65% to 92%.
