Introduction

The Standard GB/T 5506.2-2024, "Wheat and Wheat Flour - Determination of Gluten Content - Part 2: Instrumental Methods for Wet Gluten and Gluten Index", was jointly released by the Ministry of Agriculture and Rural Affairs, National Health Commission, and State Administration for Market Regulation on November 28, 2024. This standard is designed to provide uniform methodologies for determining the wet gluten content and gluten index in wheat and wheat flour using instrumental methods. It aims to enhance quality control measures within the agricultural and food processing industries by offering precise guidelines that ensure consistency and accuracy in testing procedures.

Effective from June 1, 2025, GB/T 5506.2-2024 will serve as a critical reference for all stakeholders involved in wheat production, distribution, and consumption, ensuring compliance with national standards and contributing to the overall safety and quality of food products derived from these grains.
