《GB/T 16861-1997感官分析 通过多元分析方法鉴定和选择用于建立感官剖面的描述词》由TC566（全国感官分析标准化技术委员会）归口，主管部门为国家标准化管理委员会。
本标准规定了鉴定和选择用于制定产品感官剖面的描述词的方法；也规定了建立检验过程的不同阶段，通过各阶段的检验可获得对产品感官特性的完整描述。本标准适用于：――规定产品标准，鉴定差别的性质；――研究产品老化、贮存和保藏条件的影响，从而可确定起变化的特性及其变化程度；――比较一产品和已上市的同类产品，因而可用感官知觉的术语说明差别的性质。

Scope

This standard specifies the method of identification and selection of descriptors used to develop the sensory profile of the product; it also specifies the different stages of the establishment of the inspection process, through which a complete description of the sensory characteristics of the product can be obtained: --From a qualitative point of view Look, refers to the use of descriptors to specify all the perceptions that distinguish a certain product from other similar products; --From a quantitative point of view, the product uses numerical values to represent the strength of each descriptor (the evaluator analyzes a certain component in the comprehensive perception to obtain stronger or weaker impressions). This standard is applicable to: - specifying product standards and identifying the nature of differences; - studying the influence of product aging, storage and preservation conditions, so as to determine the characteristics of changes and the degree of change; - comparing a product with a product already on the market products of the same kind, the nature of the difference can thus be described in terms of sensory perception.
