《GB/T 5511-2008谷物和豆类氮含量测定和粗蛋白质含量计算凯氏法》由TC270（全国粮油标准化技术委员会）归口，TC270SC2（全国粮油标准化技术委员会油料及油脂分会）执行，主管部门为国家粮食和物资储备局。
本标准是对ＧＢ／Ｔ５５１１―１９８５《粮食、油料检验　粗蛋白质测定法》的修订。本标准规定了用凯氏法测定谷物、豆类及衍生产品中氮含量的测定方法和粗蛋白质含量的计算方法。本标准自实施日期起代替ＧＢ／Ｔ５５１１―１９８５。本方法不能区分蛋白质氮和非蛋白质氮。如果测定非蛋白质氮含量非常重要，可以使用其他合适的方法。本标准与ＧＢ／Ｔ５５１１―１９８５相比主要变化如下：
―――增加了原理、规范性引用文件、术语和定义、扦样、试样制备、含水量测定、精密度和测试报告。

This standard specifies the determination method of nitrogen content in grains, beans and derivative products by Kjeldahl method and the calculation method of crude protein content. This method cannot distinguish between protein nitrogen and non-protein nitrogen. If the determination of non-protein nitrogen content is important, other suitable methods can be used.
