《GB/T 12456-2008食品中总酸的测定》由TC64（全国食品工业标准化技术委员会）归口，主管部门为国家标准化管理委员会。
本标准规定了酸碱滴定法和ｐＨ电位法测定食品中总酸的分析步骤。
本标准适用于果蔬制品、饮料、乳制品、饮料酒、蜂产品、淀粉制品、谷物制品和调味品等食品中总酸的测定。本标准的酸碱滴定法不适用于有颜色或浑浊不透明的试液。

Scope

This standard specifies the analysis steps for the determination of total acid in food by acid-base titration and pH potentiometric method. This standard is applicable to the determination of total acid in foods such as fruit and vegetable products, beverages, dairy products, drinking wine, bee products, starch products, grain products and seasonings. The acid-base titration method in this standard is not applicable to colored or turbid and opaque test solutions.
