本标准代替ＧＢ／Ｔ４７８９．４―２００３《食品卫生微生物学检验　沙门氏菌检验》。本标准自实施之日起，ＧＢ／Ｔ４７８９．４―２００３同时废止。本标准规定了食品中沙门氏菌的检验方法。本标准适用于各类食品和食物中毒样品中沙门氏菌的检验。本标准与ＧＢ／Ｔ４７８９．４―２００３相比主要变化如下：
―――规范了样品制备过程；
―――修改了原标准中前增菌和增菌部分；
―――修改了原标准中分离部分；
―――修改了原标准中生化试验部分。

This standard specifies the inspection method for Salmonella in food. This standard applies to the inspection of Salmonella in various food and food poisoning samples.
