本标准代替GB/T 4789.2-2003《食品卫生微生物学检验　菌落总数测定》。
本标准规定了食品中菌落总数的测定方法。
本标准适用于各类食品中菌落总数的测定。
本标准与GB/T 4789.2-2003相比主要修改如下：
―――培养基由营养琼脂改为平板计数琼脂；
―――对菌落总数的计算公式进行了修改；
―――增加了第二法“菌落总数PetrifilmTM测试片法”。
